This may be a stupid question but how do I get a list of the cards that i don't have in a particular set?

While it may not be perfect, you can go to the card database, filter by set, and then sort by number of cards owned. The only issue is that the cards own column lumps all the cards of each edition you own together, so you if you own cards of a different edition but not the one you're searching for it'll still look like you own it in that edition.

The easiest and fastest way to do this is with Premium and the Editions pages. Without Premium the pages are just a list of all of the cards in the set, but WITH Premium several columns are added including what you are looking for: [u]total number owned of this specific edition[/u].
